(一)水果Fruits 云霄枇杷 漳州的云霄县被誉为是中国枇杷之乡,每年的3月28日都会在云霄举办大型的枇杷节晚会。云霄的地理位置、特殊生态气候很适宜枇杷生长。其优良品种之一 “早钟六号”,比一般的枇杷品种提早一个月左右成熟,每年元宵佳节即可上市,有着“开春第一果”的美称。云霄枇杷以肉质细嫩、香气浓郁、甜汁多、酸味少而广销全国及印尼、新加坡等东南亚国家,并成为福建省名优农产品出口创汇的拳头产品。 Yunxiao loquat Yunxiao County is known as the land of loquat. There is always a large loquat festival party held there on March 28 each year. The geographical position and the special ecological climate here are suitable for growing loquat. Zaozhong VI, as one of the fine varieties can be ripe about a month earlier than the average ones. It goes on the market in the Chinese Lantern Festival each year, which has a laudatory title of the first spring fruit. Yunxiao loquat has the characteristic of tender pulp, strong aroma, rich sweet juice and light sour, which has been widely sold throughout the country, Indonesia, Singapore and other Southeast Asian countries. It has become the knockout product of the famous agricultural products exporting of Fujian. 平和蜜柚 平和蜜柚又名琯溪蜜柚,明末清初引入福建平和县栽培,至今已有500多年的栽培历史,是我国著名的蜜柚优良品种。平和蜜柚以其独秀的品质蝉联五届全国柚类评比“金杯奖”第一名,并连续多次被中央农业部评为柚中之冠。平和蜜柚十一月底成熟,风味甜酸适口,以果大皮薄、色晶如玉、肉嫩汁多、酸甜爽口、无籽耐贮而闻名海内外,素有“天然水果罐头”之美称。 Pinghe honeypomelo Pinghe honeypomelo is also known as Guanxi honeypomelo. It was introduced to Pinghe County of Zhangzhou in the late Ming Dynasty and early Qing Dynasty, which has been already a cultivation history of 500 years. It is a famous improved variety of pomelo in our country. Pinghe honeypomelo has continued to win five championships of Gold Cup Award in the National Pomelo Competition by its specific quality and has been chosen as king pomelo several times running by the Central Ministry of Agriculture. Pinghe honeypomelo is ripe at the end of November, which has been well-known at home and abroad for its palatable sweetness and sour, big fruit and thin jade-like peel, watered pulp, seedlessness and storability. It is commonly known as the Natural Canned Fruit. 程溪菠萝 菠萝又称凤梨及旺梨。程溪镇,属亚热带海洋性气候,年平均气温21℃,降雨量丰富,土层深厚,山地多是十分适宜菠萝种植的红壤土。程溪菠萝是由台湾有刺菠萝,经过特殊培育而成的,与程溪一带气候、环境相适应的优良品种。程溪镇目前已有多家菠萝加工企业,出产各类以“程溪菠萝干”代表的一系列“程溪菠萝”制品。程溪菠萝干,色泽金黄透亮、味道香美,呈圆形或方块状,即可干吃又可入茶,浸泡成茶后味道酸甜可口,是开胃佳品;程溪菠萝罐头及其果汁,夏日食之具有解渴降暑之功效。程溪菠萝及其系列产品凭借其优良品质远销浙江、江苏、上海、北京、黑龙江及俄罗斯等地,在东南亚地区也享有盛誉。 Chengxi pineapple Pineapple is also known as Fengli and Wangli. Chengxi Town has a subtropical maritime climate and its annual average temperature is 21℃. The rich rainfall, red loam, deep soil and mountainous region are very suitable for pineapple growth. Chengxi pineapple,as a fine cultivar originates from Taiwan barbed pineapple, which adapt itself to the climate and environment of Chengxi region. Currently,there have been several pineapple processing enterprises producing a series of Chengxi pineapple products. Chengxi dried pineapples shaped round or square bars have brilliant gloss and pleasant scent. They can be eaten directly or used to make sweet and sour pineapple tea and thus are named as good appetizers. In summer, it is good for our health to taste Chengxi canned pineapple and pineapple juice for they are efficacious in quenching our thirst. Chengxi pineapple and its processed products have been sold into Zhejiang, Jiangsu, Shanghai, Beijing, Heilongjiang, Russia and other regions and also enjoy great prestige in Southeast Asia regions. 九湖荔枝 漳州龙海九湖镇种植荔枝始于隋唐,盛于明清,世代相传,已跨千年。九湖荔枝传统品种有兰竹、乌叶、早红、乌叶鼻、桂林(金种)、绿荷包等。九湖荔枝,尤其是传统的“兰竹”荔枝,久负“百果之王”的盛名。数量仅次“兰竹”的“乌叶”荔枝,果肉呈乳白色,软滑、核大汁多,味甜而香,鲜食、制罐、酿酒、烘干、样样俱佳。1962年,以九湖“乌叶”荔枝原料酿制的“双灯牌”荔枝酒在世界饮料博览会上被誉为“中国香槟酒”。 九湖荔枝不但畅销北京、上海、天津、江苏、河北、吉林、湖北、浙江等省市及本省各地,其中冷冻荔枝、荔枝罐头还远销港澳、日本、欧美等地。 Jiuhu litchi Litchi growth in Jiuhu Town, Longhai City of Zhangzhou began in the Sui and Tang dynasties and was populous in the Ming and Qing dynasties. It was passed on from generation to generation, which has spanned over one thousand years. The traditional variety of Jiuhu litchi includes Lanzhu, Wuye, Zaohong, Wuyebi, Guilin(Jinzhong), Lvhebao, etc. The traditional Lanzhu Litchi has enjoyed great prestige of King in Fruits for a long time. The pulp of Wuye Litchi appears milky, soft, big, juicy and sweet. Wuye Litchi has been developed perfectly in every way, table litchi, canned litchi, wine litchi, dried litchi. The litchi wine with Shuangdeng Brand refined from Wuye litchi of Jiuhu was named as Chinese champagne in the World Drinks Fair in 1962. Jiuhu litchi is sold well into Beijing, Shanghai, Tianjin,Jiangsu,Hebei,Jilin,Hubei,Zhejiang and all over the local province. The frozen litchi and canned litchi are sold into Hongkong, Macow, Japan, European countries, American countries, etc. 八卦芦柑和岩溪芦柑 八卦芦柑为芦柑中的优良品种,源产于漳州南郊九湖镇的千年古刹“石狮岩”。据传为唐大中年间,“石狮岩”第九代主持中理禅师培植的,因其果蒂周围分布6到10条放射状沟棱,形似“八卦”,遂取名为“八卦芦柑”。八卦芦柑直到民国年间才逐渐扩种到漳州各地。八卦芦柑以其色美、汁多、味甜而闻名海内外,是漳州市大宗的水果出口商品之一。 芦柑在漳州长泰县有着悠久的栽培历史,其中芦柑种植以岩溪镇为最盛,1995年岩溪镇获中国芦柑之乡的称号。20世纪80年代选育出的岩溪晚芦是为芦柑新秀,被国家命名为“岩溪晚芦”。 Eight hexagrams citrus and Yanxi citrus The Eight Hexagrams Citrus is the fine variety in the citruses, which originally grew in the old Shishiyan Temple in the Jiuhu Town of Zhangzhou. It is said that Zen Zhongli, as the ninth master of Shishiyan Temple cultivated it in the years of Dazhong in the Tang Dynasty. This kind of citrus disperses 6-10 radial grooves around its stem end. They are shaped as eight hexagrams, so people call the fruit as the Eight Hexagrams Citrus. It was until the Republic of China that the cultivation of the Eight Hexagrams Citrus was gradually extended into all over Zhangzhou. It has been well-known at home and abroad for its fair peel, rich juice and mellow taste and become one of the important fruits exported. There has been a long history of citrus cultivation in Changtai County of Zhangzhou. Yanxi Town is the most populous in citrus growth. Yanxi Town won the title of the land of China citrus in 1995. The new variety of citrus chosen and cultivated in 1980s is named as Yanxi Late Citrus by our government. 天宝香蕉 漳州芗城区天宝镇是盛产香蕉的地方,“天宝香蕉”因此命名,天宝镇亦有“十里蕉园”的美称。天宝镇濒临九龙江,背靠天宝大山,九龙江泥水在此形成肥厚的淤积层,加上大山挡住北方寒冷的空气,气候尤为温和、湿润,是块得天独厚的适宜香蕉生长的宝地。天宝人有着丰富的种蕉经验,栽植香蕉品种主要有天宝矮、台湾北蕉和台湾仙人蕉。天宝香蕉以其皮薄、味香、质甜、肉软、无芯等特色,闻名于海内外。 Tianbao banana Tianbao Town in Xiangcheng District of Zhangzhou is rich in banana, so it is named as Tianbao Banana. Tianbao Town is also called as “Ten Li Banana Garden”. Tianbao Town closes to Jiulong River and backs on Mount Tianbao. The mud from Jiulong River forms a fertile and thick layer of silt here. Mount Tianbao holds back the cold air from north, so the climate here is very mild and humid. Thus, Tianbao Town becomes a treasured land uniquely suitable for banana growth. People here have rich experience of banana growing. The banana variety here mainly covers Tianbao’ai, Taiwan Beijiao and Taiwan Xianrenjiao. Tianbao Banana has been well-known at home and abroad for its thin peel, aromatic scent, mellow pulp, no core, etc. 龙海浮宫杨梅 龙海市浮宫镇历来素有“福建杨梅第一镇”之美称,这里出产的杨梅个大、味美,闻名遐迩。浮宫杨梅历史悠久,于南宋年间由晋江安海传入浮宫,至今有800多年的种植历史。2002年3月,经省政府批准,浮宫牌浮宫杨梅 成为“福建省名牌产品” 2002年11月,获得省“无公害农产品”、“中国良好农业规范”等认证,获“全省用户满意产品”等殊荣。 Waxberry of Fugong Town, Longhai Fugong Town in Longhai City is long known as the first waxberry town of Fujian Province. As they are plump and tasty, the waxberries here have gained a good reputation. With an over 800-year-long history, Fugong waxberry was first introduced during the Southern Song Dynasty from Anhai Town, Jinjiang City. In March 2002, waxberry in Fugong has been recognized as the Famous Brand Products in Fujian by the government. In November, Fugong waxberry has achieved the Harmless Agricultural Products, Agricultural Model Products and Consumers’ Satisfactory Products. (二)水产品Aquatic Products 六鳌紫菜 宋朝时,六鳌紫菜已列为贡品,清末民初,曾出口东南亚。六鳌紫菜大规模的人工养殖始于20世纪60年代中期,今年来养殖模式不断改进,目前全镇的紫菜养殖面积已有一万多亩,紫菜已成为该镇水产养殖的特色产品。 Laver in Liuao Laver in Liuao has been classified as tributes During Song Dynasty. Later, during the late Qing Dynasty and early Republican China, it has been exported to the Southeast Asia. In the middle of 1960s, Liuao laver started a large-scale artificial cultivation. Due to the improvement of breeding mode in recent years, the total breeding area of laver has increased to 10,000 mu (666.67 hectares) and laver has become the special aquatic products in Liuao Town. 霞美牡蛎 霞美镇位于漳浦县东南部,牡蛎在霞美有着悠久的养殖历史,早在清朝地方志书就有记载用破瓦缸、乱厂头养蚵的史实。“霞美牡蛎”已获福建省农产品名牌产品的称号。 Oyster in Xiamei Located southeast of Zhangpu County, Xiamei Town has a long history of breeding aquatic products. In the local chorography of the Qing Dynasty, it is recorded that broken jars and pots have been used to raise oysters. So far, Xiamei’s Oyster has gained the Famous Brand Products of Fujian Province. 东山鲍鱼和古雷鲍鱼 漳州的东山和古雷都有已具一定规模的鲍鱼养殖。东山岛四季如春,气候宜人。该海域常年水质清澈,海藻丰富,海水的盐度适中,并且不受台风因素制约,是鲍鱼养殖理想地域。国家已投资在东山建起一座中国最大的“鲍鱼增殖场”。古雷镇位于漳州市漳浦县南端的古雷半岛上。自1996年古雷鲍鱼城建成以来,全镇共发展工厂化养鲍100余家,年产值可达1亿元。 Abalone in Dongshan and Gulei Dongshan Island and Gulei Town in Zhangzhou City have got certain breeding scales of abalone. With pleasant weather all the year round free from typhoon effects, Dongshan Island is an ideal abalone breeding area with clear seawater, abundant seaweed, and moderate seawater salinity. Because of the country’s investment, Dongshan has already set up the biggest abalone breeding farm in China. Gulei Town is located on the Gulei Peninsula in the southern end of Zhangpu County, Zhangzhou City. Since the establishment of Gulei Abalone City in 1996, more than 100 abalone factory plantations have been developed in Gulei town, with a 100-million RMB annual output. 江东鲈鱼 漳州龙海市角美镇江东桥下附近一带水域,江深水清,淡水长流,所产鲈鱼,远近驰名,得名“江东鲈鱼”,又称“阔嘴鲈”。江东鲈鱼炖姜丝,名为“江东清炖鲈鱼”,是龙海名菜,已列入中国菜谱福建版。在国道324线江东桥头段,几十间“江东鲈鱼餐馆”沿公路两侧摆开,每天接待成百上千远近的慕名而来者,生意异常红火。 Perch in Jiangdong Jiangdong Perch, also known as Broad-mouth Perch, lives in the deep and clear water around Jiangdong Bridge in Jiaomei Town, Longhai City. As a famous dish in Longhai, the stewed perch and shredded ginger, named Jiangdong Steamed Perch, has been listed in the Fujian part of Chinese Cookbook. Along the Jiangdong Bridge of the No. 324 National Highway, there are numerous Jiangdong Perch Restaurants on both sides of the road, which are busy with receiving hundreds of customers who are attracted by the fame of Jiangdong perch everyday. (三)副食品Non-staple Food 白水贡糖 白水贡糖,因其产地在漳州龙海市白水镇而得名。其特点是香、酥、醇、美,入口自化,不留渣屑,香甜可口,回味无穷。相传早在明朝便做为一种珍贵的贡品进贡朝廷,让皇帝品尝。白水贡糖由花生仁、麦芽糖、上等白糖混合精致而成。传统贡糖作坊每一道工序都是手工制作,新的贡糖加工厂则是引进机器代替人工操作,使制作工序更加精细,口味更加完美。 Baishui Gongtang (Baishui Tributed Candy) Named after the place of its production (town of Baishui in Longhai County), Baishui Gongtag is a popular candy with its distinctive beauty, purity, fragrance and crispness. It melts immediately and sweetly at the moment it enters your mouths, leaving a lingering wonderful aftertaste. Maybe that is why it was presented as a precious tribute to the imperial family of the Ming Dynasty and enjoyed by the emperors. Peanut kernel, malt sugar and the first-class white sugar are the main three components mixed delicately to make Baishui Gongtang. At the traditional workshops, each step of the producing process is undertaken by hand, while in the newly-equipped factories, the production operated by sophisticated machines rather than workers generates Baishui Gongtang with better quality. 长泰明姜 长泰明姜是以生姜和糖为原料加工而成的蜜饯产品。长泰明姜的加工始于宋元时期,明朝靖德年间被列为常年进贡的珍异食品。长泰明姜以其独特的口感和防病治病的药用功能而代代相传,成为备受喜爱的传统名产之一。长泰明姜外观洁净明爽、皎然若霜,食之甜中带有微辣,甜而不腻。食之具有消痰、镇咳、开脾、健胃的功效。 Changtai Mingjiang (Changtai Ginger Candy) Changtai Mingjiang, a candied food made of ginger and sugar, is reported to be primarily made in the Song and Yuan dynasties and tributes to the Ming imperial court as a rare and treasured food in the reign of Emperor Zhengde and Emperor Jiajing in the Ming Dynasty. It is passed on from generation to generation and reputed as one of the popular traditional foods because of its unique texture and the medical effectiveness to prevent and cure diseases. Changtai Mingjiang possesses clear and pleasant appearance as pure as frost. A taste of subtle hotness in moderate sweetness will prolong in your mouth if you taste it. It also owns the medical functions to diminish inflammation, relieve cough, stimulate appetite and healthier stomach. 小溪枕头饼 小溪枕头饼是漳州平和县著名茶料甜点,长条状外形,大小与小指头相近,形似枕头,故而得名。据《漳州府志》载,明万历年间曾被列为贡品。直到乾隆年间才传入民间,逐渐成为大众化食品。小溪枕头饼外观小巧玲珑,生产工序繁细考究。在选料和制馅上,须选用上等精面粉、猪油、白冬瓜条、白糖、山柑等原料,并按一定比例进行配制,确保馅料入口即化不留渣。烘烤时要求四面烘赤而不焦,技术性极强。包装时,传统枕头饼每小包八条饼,分为二层,中间以蒸过的竹叶为隔层。竹叶能保鲜、防潮、隔油,既可延长保质期,又使竹叶香味渗入饼中。此饼小巧精致,香甜酥脆,佐茶绝妙。 Xiaoxi Zhentou Bing (Xiaoxi Pillow-shaped Cake) Made in the town of Xiaoxi of Pinghe County, Xiaoxi Zhentou Bing, a pillow-like cake with the size similar to your little finger, wins its fame and popularity as a dessert with tea drinking. It is reported in Zhangzhou Prefecture Annals that this pillow-shaped cake was classified as a tribute to the imperial palace in the reign of Wanli (1573-1620), 14th emperor of the Ming Dynasty. It didn’t become a public food until it was spread among folk people during the reign of Emperor Qianlong in the Qing Dynasty (1736-1795). Small but exquisite, Xiaoxi Zhentou Bing requires strict and complicated producing process. Only the first-class wheat flour, selected lard, sugary wax gourd slices, white sugar and mandarin oranges could be chosen as the materials prepared in a technical proportion to make the special cake, which ensures that the filled staff in it melts smoothly and sweetly in the mouth. The baking skills are also sophisticated so as to meet the requirement that six sides of the cake are toasted brown but not dark brown or even black. Traditionally, eight little cakes are packed into one delicate packet with a two-storied pattern separated by a small piece of steamed bamboo leaf which can not only keep the cake fresh and dry but also fill it with natural fragrance of bamboo. It is all these techniques and skills that popularize the cute pillow-like cake as a terrific dessert for tea drinking. 诏安酸枣糕 诏安酸枣糕是以闽北山区素有“山中果王”之称的野生酸枣为原料,经果物保鲜,脱皮去核,加入蔗糖,铜锅浓缩,自然风干,精制而成。其糕体呈半透明状,美似琥珀,酸甜可口,传承野酸枣之原味,果味浓郁,口感韧软细腻,略具咀嚼性。酸枣糕含有原果固有的丰富黄酮、维生素C、果酸、有机酸、氨基酸、钙、铁、锌、钾等多种对人体有益的微量元素。营养丰富的酸枣糕具有化痰止咳、益肝润肺、清肺开胃、降血脂、增进食欲之功效,是一种具有浓郁地方特色的纯天然营养健康食品。 Zhao’an Wild Jujube Soft Candy Wild jujube, one of the best wild fruits grown in the northern mountainous area in Fujian Province, is selected as the main material to make the well-known soft candy through a series of process in which the fresh wild jujubes are peeled and seeded, cooked till condensed in copper pot with sugar and then air dried naturally. The product holds a translucent body looking beautifully like an amber and has a sour, sweet soft and smooth taste wonderfully with the original flavour of wild jujube. Because it contains various microelements beneficial for human’s health such as flavonoids, Vitamin C, Alpha Hydroxy Acid, organic acids, amino acid, calcium, iron, Zinc, Potassium, etc., Zhao’an Wild Jujube Soft Candy, as a natural, nutritional and healthy food with unique local characteristics, can help reduce phlegm, relieve cough, promote liver function, moisten lungs, stimulate appetite and reduce blood fat. 南胜麻枣 南胜麻枣是平和著名茶料甜点,原产地在南胜镇,已有700多年历史。南胜麻枣要以上等糯米、白糖、饴糖、花生油、白麻等为原料,分三道工序精制而成。第一道工序,先把角棕芋加工成粉末状,拌以糯米粉,制成麻枣胚(麻枣心)。这道工序的诀窍在于角棕芋和糯米搭配的比例,增其一份则太多,减其一份则太少,只有比例恰当才会使麻枣胚一炸即胀,入口即化。历来“秘方”只传媳妇,不传女儿。第二道工序和第三道工序,是把麻枣胚用花生油炸涨,迅速捞出,再醮糖浆,拌以白麻,成为枣糕。南胜麻枣的特点是皮酥而脆,质嫩而甜,富有韧性而独具风味。 Nansheng Mazao (Nansheng White Sesame Seed Pastry) With a history longer than 700 years, Nansheng Mazao is famed and popular dessert for tea drinking. Its birth place is the town of Nansheng in Pinghe County of Zhangzhou. The raw materials for its production are fine glutinous rice, selected wild taros, refined white sugar, malt sugar, peanut oil and first-class white sesame seeds. They go through the following three processes to become the delicious pastry. First, wild taroes are grinded into powder and then mixed with glutinous rice flour to form the core of the pastry. The secret hidden in the first step is the proportion of mixing the above two powders. Only with the proper mixture can the core expands immediately when fried. It is an old tradition that the esoteric recipe could sorely be handed down to daughter-in-laws of the family while not the daughters. In the second and the third steps, the newly-created core is fried into hot peanut oil and taken out as soon as it expands. After that it will be dipped in liquified sugar and then in fried white sesame seeds. Thus, the product comes into being with crisp outer , tender, sweet but tough inner and unique flavour. (四)林产品Forest Products 平和白芽奇兰茶 白芽奇兰茶产于漳州平和县。平和属南亚热带季风气候,境内海拔1544.8米的大芹山为漳州第一高峰,山峦起伏,溪流潺潺,享有生产优质茶叶的得天独厚的自然生态环境。白芽奇兰茶是中国乌龙茶的新秀,其最突出的特点是天然的兰花香气浓郁持久,口感滑顺,饮后齿颊留香,(喉底)回甘醇厚。其叶片色泽翠绿油润,含有多种微量元素对人体健康有着特殊的功效。近年来,白芽奇兰茶不仅受到国内市场的青睐,还畅销日本及欧盟等国家,受到国外顾客的欢迎。 Pinghe White Tip Qilan Tea White Tip Qilan Tea is planted in Pinghe County where the tropical monsoons climate and the mountainous environment provide advantageous ecological environment for the production of high quality Qilan tea. Qilan tea is a rising star in the varieties of Oolong tea. A strong and lasting orchid flavor is a typical feature of Qilan tea. The 'Hui Gan' (sweet aroma after drinking) is very intense and a slow exhale after each sip reveals the tea's beauty and complexity every time. In recent years, Qilan tea has sold well in Japan and European Union and won popularity at home and abroad. 东山芦笋 芦笋学名石刁柏,是一种多年生的连作蔬菜,一次种植多年受益。芦笋原产于欧洲地中海沿岸,以及小亚细亚地区,种植历史已有2000多年,鸦片战争后期,传教士把芦笋带入我国。东山岛沙壤地多,尤适种植芦笋。芦笋中含有丰富的能抑制癌细胞生长的组蛋白和多种氨基酸,是抗疲劳、增强体力的营养滋补品,具有防癌、抗癌、降低血脂、预防冠心病等药用价值。它的各种维生素含量都比其它蔬菜高出3―10倍。芦笋是世界十大名菜之一,备受欧洲人青睐,在欧洲有“蔬菜大王”的美称。多年来,东山岛人总结出多种多样的芦笋吃法,芦笋炒鸡蛋、芦笋余海鱼、芦笋炒虾仁、芦笋煮排骨、芦笋花炒肉片,以及芦笋粥、芦笋油饭等都是东山岛的特色菜肴。此外,东山岛还有芦笋茶、芦笋干、芦笋酒、芦笋蜜饯等多种芦笋食品。 Dongshan Asparagus Asparagus, scientific name as Asparagus officinalis, is a continuous cropping vegetable. It originates in the Mediterranean and Asia Minor with a planting history of 2,000 years. In the late of the Opium War, asparagus was taken to China by churchman. The sandy land in Dongshan Island is appropriate for the growing of asparagus. The histone and amino acid in asparagus can restrain the growth of cancer cells. Its vitamin content is three to ten times higher than other vegetables and has many medical values such as preventing and resisting cancer, lowing blood lipid and preventing coronary heart disease. Asparagus is listed into Ten Famous Vegetables in the World and enjoys the reputation as King of Vegetable in Europe. The people in Dongshan have developed many ways to cook asparagus like asparagus congee and asparagus glutinous oil rice. In addition, there are lots of asparagus-related foods in Dongshan such as asparagus tea, dried asparagus, asparagus wine and asparagus preserves. |
